Healthy Lunchtime Duck-less Salad



  • Water cress
  • Spinach
  • Rocket
  • Springless Beans
  • Beef Style Pieces
  • Pumpkin Seeds
  • Sunflower Seeds
  • Lemon Juice
  • Black pepper
  • Half a Sweet Potato


  1. Cut your sweet potato into medium chunks and boil in a pan until soft
  2. Throw a handful of watercress, spinach and rocket and put that in the bowl
  3. Cut up one springless bean and add to the leaves
  4. Rip up as many beef style pieces as you like and add them to the bowl
  5. Add your cooked sweet potato to the bowl
  6. Sprinkle pumpkin seed, sunflower seeds over your salad followed by a drizzle of lemon juice and a few shakes of ground black pepper
  7. Enjoy!
